Bahtiyar Büyükduman is leading the kitchen of Telezzüz, Türkiye’s first vegan fine dining restaurant. With each plate, the chef takes his guests on a flavor journey and explains his respect for the Earth and sustainability. The team creates every recipe on the menu with inspiration from vegan and vegetarian culinary traditions, using fresh and seasonal produce to capture their flavors. The dishes that stand out on the menu are Emperors’ Asparagus and Keskek (boiled and ) pounded wheatberries with Glazed Artichokes. As for dessert, the most preferred choices are Everything About Strawberries and Journey to Cuba.
