Sefa Birinci and Gamze Yenilmez are in the kitchen of HİÇ Urla, a restaurant defined as ‘an immersive Urla adventure from forest to plate.’ The dishes are created using ingredients grown in Urla’s terroir and from the HİÇ Olive Forest, which represent respect for nature. Described as a ‘kitchen without tweezers,’ HİÇ Lokanta is also where local flavors combine with technological interpretations to create ‘New Urla Cuisine.’
